Please help me find my mother's cake recipe
DEAR READERS: May 12 is Mother's Day. A reader asked me for my late mother's recipe for Strawberry Cake, and I've been unable to find it. I'm hoping someone does a better job of saving precious things than me! Besides strawberries, the recipe ingredients included strawberry gelatin, and I think the icing was added to the cake while the cake was hot, so it soaked in. Thanks.
The following, shared recently, is not my mother's recipe, but you might like it. A reader named Jane shared it.
• 1 cup milk
• 4 eggs
• 1 box (3 ounces) strawberry gelatin
• 1 box white cake mix
• 1 pkg. (10 ounces) frozen strawberries, thawed and drained
• 3 tablespoons flour
• 1/2 cup vegetable oil
Preheat oven to 350 F. Spray three 8-inch pans with nonstick spray. In large mixing bowl, stir together milk, eggs and gelatin. Add cake mix and beat until well mixed. Stir in strawberries, flour and oil. Mix well and divide in prepared pans. Bake 35 minutes or until done. Set aside to cool while preparing frosting.
• 1/4 pound butter or margarine
• 1 pound powdered sugar
• 1/2 pint strawberries, thawed and drained
In medium mixing bowl, cream butter and sugar. Stir in strawberries. Arrange one cooled cake layer on cake serving plate, spread with frosting mixture. Add remaining layers, spreading each with icing, saving enough to cover entire cake when layered together.

DEAR MELBA: I've lost a recipe for Chocolate Cupcakes. It makes 12 over-the-top cupcakes.
I recall it contains baking chocolate and pecans or maybe chocolate chips. Thank you.

This dip is strong to the finish
DEAR MELBA: You've shared several dip recipes recently, but I don't recall one for Spinach Dip.
• 1 package frozen chopped spinach, thawed
• 1 package (8 ounces) cream cheese, room temperature
• 1 cup ranch salad dressing
• 1 cup mayonnaise
• 1 container (8 ounces) sour cream
• 1 1/2 cups shredded Cheddar cheese
• 3 green onions, chopped
Thaw spinach and stir together with remaining ingredients. Cover and refrigerate until ready to serve.
If you like, you could add a can of slivered water chestnuts. The best way to like to serve the dip is spread on crackers.
