Melba's Swap Shop: Date loaf or date log sounds good
DATE LOAF OR DATE LOG SOUNDS GOOD
DEAR MELBA: My mother made this recipe every year for Christmas, but it would be good any day.
•2 cups sugar
•1 cup milk
•1 cup dates, chopped
•1 cup nuts, chopped
Cook sugar and milk until it threads. Add dates and cook until it crystallizes. Stir in nuts and beat until stiff. Spread on wet cloth and form into loaf or roll. When cold, slice.
— Carol Morgan, Tuttle
I have not made this date loaf but was talking to a friend about it, and she said she makes it. She calls it date log and says it's very good.
DEAR MELBA: Would you like an upside-down dessert? And, yes, two cups of water is correct.
•1 cup light brown sugar
•1/2 cup cocoa
•2 cups water
•1 1/2 cups mini-marshmallows
•1 devil's food cake mix
•1 teaspoon vanilla
•1 cup chopped pecans
Heat oven to 350 F. In 9-by-13-inch baking pan, measure sugar and cocoa. Stir until well mixed. Add water and stir to blend. Sprinkle with mini-marshmallows. Do NOT stir. Set aside.
Prepare cake mix by box directions. Add vanilla. Gently spoon batter over mixture in pan. Sprinkle with pecans. Do NOT stir. Bake about 50 minutes.
Remove from oven and cool slightly. To serve, cut into serving size pieces and serve up-side down. This means, sauce-side up.

A TASTE FOR TEX-MEX SOUP
DEAR MELBA: While eating out recently, we were served the most delicious chicken enchilada soup. Please ask if anyone has a recipe for it!
